Heirloom Tomato Salsa

I don’t know about you guys, but my garden has exploded.

I haven’t been great about posting garden updates, but let me just say this… My black thumb is completely gone. I’m a full-on farmer now! No joke, I even have overalls and a hat to prove it (don’t judge! the pockets are amaaaaazing).

We started our garden the same weekend as our regional plant expo, so of course we got some hard-to-find goodies. My favorite (and the most prolific) of which is the gigantic, red Mortgage Lifter heirloom tomato. And it lives up to its name more and more each day.

Being the only one in our tiny family that willingly eats sliced, raw tomatoes, I had to find another way to convince the hubs to eat these babies up! Enter salsa. Not just any salsa though. No, it’s got its fancypants on!
